This quick and easy soup recipe will keep you warm and well nourished all winter long!
Serves 4
Ingredients
3 tablespoon Olive Oil
2/3 cup chopped Carrots, raw
1/2 cup chopped Onions, raw
1 tbsp Spices, rosemary, dried
3 1/2 cup Tomatoes, canned, stewed
1 cup, shredded Cabbage, raw
Directions
In large pot, saute carrots, cabbage and rosemary in olive oil over moderate heat for 10 minutes or until tender.
Add chicken stock and stewed tomatoes, bring to a boil.
Cover and cook for 30 minutes, stirring occasionally.
For a gourmet look, top each bowl of soup with a teaspoon of freshly sliced scallions.

This simple and sweet chicken recipe is ready in less than an hour!
Serves 4
Ingredients
3 breasts boneless, skinless chicken
1 tbsp red peppers
1/3 cup honey
1/3 cup yellow mustard
1/2 tsp dried parsley
1 tablespoon margarine
Directions
Preheat oven to 350 degrees F.
In small bowl combine mustard, honey, red peppers, and parsley. Mix well.
Lightly grease 9x13 inch baking dish with Smart Balance spread.
Pour half of mixture over chicken breasts.
Bake chicken for 30 minutes.
Turn chicken over and brush with remaining honey mustard mixture, and bake for additional 10 minutes or until juices run clear.

Directions
Mix lettuce, cucumbers and tomatoes.
Top with olives and feta cheese.
Add Italian dressing.
